On the Menu Monday

Morning y’all and welcome back! It feels good to be back into the routine of weekly meal planning. Being back at work has made me have to be super structured with our meal planning, but I don’t mind one bit. I do want to mention though, that even though I have this plan in place, I don’t always follow it to a T. This is because life happens, as we all know! But anyway, let’s jump into it!

You know how I mentioned that life happens and I don’t always follow the plan to a T? Well… this week is case in point.  You might notice several items from last week’s menu on this week’s menu. That’s because we didn’t follow last week’s menu perfectly and still have some of the food leftover to cook. So here we are! Haha! Tonight I am making the chickpea curry* I mentioned in last week’s post. This will be good for leftovers for me at school.

I also got a new cookbook recently and will be making a broccoli and cheddar soup** from it (also good for leftovers). This book is called “The Easy 5-Ingredient Slow Cooker Cookbook”. I thought this would be SUPER helpful for me with having to feed Andee right when I get home at 5pm. I do have to potentially prep things at night or get up even earlier to do it in the morning, but the pay off is a nice warm meal right when I get home from work.

And for breakfast… I quickly realized that I forget to eat breakfast if I am not home to eat it with Andee. And I also quickly realized that I do NOT function well without breakfast. So this week I made some yummy lemon blueberry muffins. I sometimes forget how easy a batch of muffins are to make and how long they last. I’m thinking I may make a batch each Sunday from here on out (or at least for the next little while lol).
