
Morning y’all and welcome back to Warm Beer, Cold Coffee! We had a fabulous weekend where Andee and I crafted some Father’s Day gifts on Friday, lots of family snuggles on Saturday and a Father’s Day brunch on Sunday. Keenan made eggs, bacon and scallop potatoes and I made fruit salad. And lemme tell ya, it was yummmmmmmmy. I also made Keenan some homemade chocolate chip cookies using a recipe I’ve followed since I was about 10 years old. And as a side note, we watched an incredible documentary called Crack on Netflix that I would highly recommend watching if you enjoy learning about drug distribution and addiction as well as social injustices. Now let’s dive into our meal plan for the week!
Weekly Meal Plan Menu (25)
This week we are recycling through some of our favorite meals, and I cannot WAIT for the hibachi chicken and yum yum sauce! We follow **this recipe for the hibachi chicken and this ***one for the yum yum sauce. It definitely does NOT disappoint!
We have made a raspberry and chicken salad several times, but are going to make it with steak this time. We’ve had it that way once and it is so freakin’ good! We add cucumber, avocado, goat cheese and green onion to it with a sweet vinaigrette dressing. It’s super refreshing and fairly easy to make.
We are also making an orzo salad with shrimp that makes for great left overs. We basically follow *this recipe, but change a few things like red bell pepper for green bell pepper and I only put olives on my portion of the meal.
And we always make sure to have a VERY easy meal or two in our weekly meal plan. So this week it’s a frozen pizza and salad as well as sausage and tortellini. Obviously the frozen pizza is super straight forward and we just do a bagged Caesar salad kit for the salad. Then for the sausage and tortellini, we just grill the sausages, which is honestly the hardest part of this meal. So basically its like really easy. Lol!
And for lunches, if y’all have been following this series for a while you know I love me some leftovers. Some of the recipes for this week make a decent amount of leftovers and others make ZERO! So I bought a premade Greek pasta feta salad to tide me over.
